WHAT IS SWISS MERINGUE BUTTERCREAM!?
“I’ve heard you mention this Swiss Meringue Buttercream a lot, what is it and why is it so great!?”
Swiss Meringue Buttercream, or SMB, is the most delicious, silky, smooth thing we here at Dolly Dew Drops can think of! Made by hand whisking egg white and caster sugar over a hot pan of boiling water until it is up to temperature that cooks the eggs, this is then whisked at high speed into a fluffy and gorgeous swiss meringue – know that marshmallow spread you can buy ‘Fluff” at this stage it looks and tastes a lot like that. At this point it is effectively a fully usable, soft meringue, this can then be piped onto for example lemon meringue pie. So what makes it buttercream, que the addition of the finest quality, creamy butter, lovingly beaten in one cube at a time until finally a silky, delicous swiss meringue buttercream is formed. A huge variety of flavours can then be folded into this mixture to make the fillings for Dolly Dew Drops cakes, some of our favourites include, rich Belgium chocolate ganache, homemade raspberry coulis, zesty lemon curd or simply Madagascan vanilla bean paste.
Not the quickest filling to make, but worth every extra minute. Why is it so delicious – we at Dolly Dew Drops believe its the lack of super sweet icing sugar – the key ingredient of normal buttercream – this stops it from becoming super sweet and allows all the different flavours to really sing and the rich butteryness to really shine through.
